For Christmas, I love to roast duck. This meal is inspired by a wonderful meal that I had at a restaurant in Rochester.
- Roast Duck
- Braised Red Cabbage with Beets
- (optional) Potato Pancakes
- (optional) Risotto with Exotic Mushrooms and Spinach (without the spinach)
- Blackberry and Brandy Sauce
- (optional) Wassail Punch
Tips
- I struggle to make potato pancakes (latkes) without the result being a bit greasy. So years, I attempt the pancakes and other years, I make the risotto recipes (without the spinach).
- Instead of using risotto, you can also make the recipe with long-grain wild rice.
- I always serve the duck on top of the braised cabbage. If I make potato pancakes, I serve them beneath the cabbage.
- The blackberry sauce is delicious on top of the duck. Any left-over sauce is delicious on top of ice cream later in the evening.
