Roast Duck

  1. Wash and dry duckling.
  2. Rub some salt inside the duckling and stuff with sprigs of fresh sage and chunks of apple and onion.
  3. Score the skin of the duck about half-way through the fat layer.
  4. Combine remaining ingredients (except apple and sage) and brush over duckling; let stand for 1 hour, turning occasionally.
  5. Preheat oven to 350°F.
  6. Roast for 2 hours (or until internal temperature reaches 175°F), turning and basting with drippings occasionally.
