Roast Duck

- 1 ⨯ 5-pound duckling
- 1 – 2 green apples, cut into large pieces
- 1 onion, cut into large pieces
- 1 – 2 sprigs of fresh sage
- 2 tablespoons soy sauce
- 1 clove garlic, minced
- 1½ teaspoons sugar
- 1 tablespoon honey
- 1 teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon ground ginger
- Wash and dry duckling.
- Rub some salt inside the duckling and stuff with sprigs of fresh sage and chunks of apple and onion.
- Score the skin of the duck about half-way through the fat layer.
- Combine remaining ingredients (except apple and sage) and brush over duckling; let stand for 1 hour, turning occasionally.
- Preheat oven to 350°F.
- Roast for 2 hours (or until internal temperature reaches 175°F), turning and basting with drippings occasionally.
