Bûche de Noël Chocolat

- 3 – 6 egg yolks
- ½ cup powered sugar, sifted
- 1 teaspoon vanilla
- 4 – 6 tablespoons cocoa
- ¼ teaspoon salt
- 3 – 6 egg whites
- ½ teaspoon cream of tartar
- Crème Chantilly
- Chocolate Butter Icing
- Preheat the oven to 325°F.
- Have all ingredients at room temperature.
- Use a 10.5 ⨯ 15.5 ⨯ 1 inch baking sheet. Grease the baking sheet, then line with a long strip of parchment paper which extends over the edge of the pan. Grease the paper as well.
- Beat the egg yolks until light.
- Gradually add the powdered sugar and beat until creamy.
- Add the vanilla.
- Sift and add the cocoa. Add the salt.
- Separately whip the egg whites until stiff, but not dry.
- Gently fold in the eggs whites and cream of tartar into the cake batter.
- Spread the dough in the greased pan to the thickness of ¼ inch. Bake the cake about 20 minutes. Let it cool for 5 minutes.
- Fill with Crème Chantilly.
- Cover with Chocolate Butter Icing.
