Bûche de Noël Chocolat

  1. Preheat the oven to 325°F.
  2. Have all ingredients at room temperature.
  3. Use a 10.5 ⨯ 15.5 ⨯ 1 inch baking sheet. Grease the baking sheet, then line with a long strip of parchment paper which extends over the edge of the pan. Grease the paper as well.
  4. Beat the egg yolks until light.
  5. Gradually add the powdered sugar and beat until creamy.
  6. Add the vanilla.
  7. Sift and add the cocoa. Add the salt.
  8. Separately whip the egg whites until stiff, but not dry.
  9. Gently fold in the eggs whites and cream of tartar into the cake batter.
  10. Spread the dough in the greased pan to the thickness of ¼ inch. Bake the cake about 20 minutes. Let it cool for 5 minutes.
  11. Fill with Crème Chantilly.
  12. Cover with Chocolate Butter Icing.
