Will’s Pasta Salad

Favorite Personal Vegetarian addedJuly 2018
- ¾ pounds medium pasta shells, cooked al dente
- ½ red pepper, diced
- ½ green pepper, diced
- ½ medium red onion, diced
- 1 large dill pickle, diced
- 8 ounces cheddar (or Colby Jack) cheese, cut into small cubes
- 2 hard-boiled eggs, diced
- 2 tablespoons mayonnaise
- 1 teaspoon mustard
- 1 tablespoon oregano
- (optional) celery seed
- salt, to taste
- pepper, to taste
Tips
- When I hard-boil eggs, I place the eggs in a pan, cover with cold water and bring to a boil. I either cook them for 12 minutes from the time I turn on the burner or 7 minutes from the start of the boil. As soon as the time is complete, I drain the water and cover the eggs with ice water until they are cool.
