Will’s Pasta Salad

• ¾ pounds medium pasta shells, cooked al dente
• ½ red pepper, diced
• ½ green pepper, diced
• ½ medium red onion, diced
• 1 large dill pickle, diced
• 8 ounces cheddar (or Colby Jack) cheese, cut into small cubes
• 2 hard-boiled eggs, diced
• 2 tablespoons mayonnaise
• 1 teaspoon mustard
• 1 tablespoon oregano
• (optional) celery seed
• salt, to taste
• pepper, to taste

Tips

• When I hard-boil eggs, I place the eggs in a pan, cover with cold water and bring to a boil. I either cook them for 12 minutes from the time I turn on the burner or 7 minutes from the start of the boil. As soon as the time is complete, I drain the water and cover the eggs with ice water until they are cool.
