Sauce
- ½ cup plain Greek yogurt (2% or 5%)
- 2 tablespoons tomato paste
- ½ teaspoon garam masala
- ½ teaspoon cumin
- ½ teaspoon coriander
- ¼ teaspoon turmeric
- 1 pinch paprika
- 1 – 2 teaspoons grated ginger
- 1 clove garlic, minced
- 1 – 2 teaspoons lemon juice
- 1 – 2 tablespoons water to thin
- salt, to taste
- Combine the sauce ingredients in a bowl and mix well.
Crust & Toppings
- 6 – 8 ounces paneer, cut into small cubes
- 1 teaspoon olive oil
- ½ cup red onion, thinly sliced
- ½ cup bell peppers, thinly sliced
- (optional) ¼ cup cherry tomatoes, halved
- (optional) ¼ – ½ cup light mozzarella or part‑skim shredded cheese
- 1 cauliflower pizza crust (store‑bought or homemade)
- (optional) 1 tbsp fresh cilantro, chopped
- Depending on the brand of cauliflower crust, you may want to preheat the oven to 425° and pre-crisp the crust until golden brown.
- Heat oil in a non-stick pan. Add paneer cubes and brown until golden on all sides
- Spread a thin layer of the sauce over the crust.
- Scatter the seared paneer.
- Add the onions, peppers, and tomatoes.
- Sprinkle the cheese over the top (if using), enough to melt and bind.
- Bake at 425° for 10-13 minutes, or until the cheese is melted and bubbly.
- Top with fresh cilantro before serving.
Tips
- You can substitute chicken or tofu for the paneer, if desired.
- Optional: drizzle with a mint yogurt sauce (Greek yogurt + mint + lemon + pinch salt).
