Tabbouleh

- 1 cup fine bulgur (#1 grind)
- 1 cup boiling water
- 3 – 4 green onions, sliced finely
- 1 cup parsley, stems removed, chopped finely
- ¼ cup fresh mint leaves, chopped finely
- 1 cup cherry tomatoes, quartered
- (optional) 1 medium cucumber, seeded and diced
- (optional) 1 cup walnuts, roasted
- 3 tablespoons fresh lemon juice
- 3 tablespoons olive oil
- (optional) 1 tablespoon red wine vinegar
- (optional) 1 dash cayenne pepper
- (optional) ¼ teaspoon ground cumin
- salt and pepper
- Place bulgur in a large mixing bowl. Cover with boiling water and let stand 5 to 10 minutes, then fluff grains with a wooden spoon.
- Add onions, parsley, mint, tomatoes, cucumber, and walnuts. Mix well.
- Finally, add the rest of the ingredients one at a time. Mix thoroughly. Chill in the refrigerator and toss once again before serving.
Tips
- Excellent topped with grilled chicken.
