Snap Peas & Carrots

- 2 carrots, thinly sliced
- 8 ounces sugar snap peas, trimmed and halved
- 4 scallions, cut into 1-inch pieces
- 2 tablespoons butter or olive oil
- Salt and pepper, to taste
- Melt 2 tablespoons butter (or oil) in a large nonstick skillet over medium heat. Add the carrots and cook until slightly softened, 2 minutes. Add the sugar snap peas and large scallion pieces; season with salt and pepper, and toss. Add 2 tablespoons water, cover and simmer until the vegetables are crisp-tender, 4 to 5 minutes.
