Snap Pea & Cinnamon Cap Mushroom Stir-Fry
Cinnamon cap mushrooms stay crunchy when fried and provide a wonderful texture.

- 1 tablespoon vegetable oil
- ½ pound sugar snap peas
- ½ pound cinnamon cap mushroom (including stems), sliced
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 tablespoon soy sauce
- Heat oil in a wok or large skillet over high heat.
- Add mushrooms, sugar snap peas, bell pepper, and sliced onions and stir-fry until the vegetables are tender-crisp, about 5 minutes.
- Add garlic and stir-fry for another minute.
- Add soy sauce and stir-fry for another minute.
- Serve with the rice and additional soy sauce.
