Roasted Garlic Salad Dressing

- 1 head garlic
- 2 tablespoons red wine vinegar
- 2 teaspoons Dijon mustard
- ½ teaspoon kosher salt
- pepper, to taste
- ⅓ – ½ cup extra-virgin olive oil
- 3 tablespoons Parmesan cheese, grated
- Slice the top off the head of garlic; drizzle with olive oil, wrap in aluminum foil and roast at 400°F until tender, approximately 35 minutes. Cool, then squeeze out the cloves
- In a blender, mix red wine vinegar, Dijon mustard, salt, pepper and olive oil.
- Add garlic and Parmesan, a mix until blended.
