Roasted Garlic Salad Dressing

  1. Slice the top off the head of garlic; drizzle with olive oil, wrap in aluminum foil and roast at 400°F until tender, approximately 35 minutes. Cool, then squeeze out the cloves
  2. In a blender, mix red wine vinegar, Dijon mustard, salt, pepper and olive oil.
  3. Add garlic and Parmesan, a mix until blended.
