Quick Pickled Red Onion
Vegan
- 1 red onion, thinly sliced
- 1 tablespoon lemon juice
- 1 tablespoon salt
- 2 tablespoons sugar
- 1 cup apple cider vinegar
- 2 cups water
- Put sliced red onion in a glass jar and top with lemon juice, salt, sugar, vinegar and water until completely covered. Put the lid on and refrigerate for 8 to 24 hours.
