Philly Cheesesteaks

- 1½ pounds sirloin steak, trimmed
- 1 large yellow onion, sliced
- 1 green pepper, thinly sliced
- 1 red pepper, thinly sliced
- ¾ pounds mushrooms (cremini and shiitake), coarsely chopped
- 2 tablespoons butter
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 8 Provolone cheese
- 4 hoagie rolls
- Place steak in freezer for 30 to 45 minutes; this makes it easier to slice the meat
- Heat 2 tablespoon of butter and 1 tablespoon of oil in a large sauté pan over medium heat. Add the onions, season with salt and pepper, and cook slowly for 20 minutes, stirring occasionally.
- Add the peppers and mushrooms and cook for an additional 20 minutes, until the onions are caramelized and golden brown. Transfer to a bowl.
- Meanwhile, remove the steak from the freezer. With a sharp knife, slice the meat into very thin strips.
- Turn the skillet to a medium-high heat and add the remaining oil. Add the meat, season and cook until it is done to your liking.
- Divide the meat among the 4 rolls, top with onions, peppers and mushroom. Top with cheese and place in a warm oven to melt slightly.
