Pear Chutney
This chutney is wonderful served on top of pork chops.

- 1 shallot, diced
- 3 tablespoons cider vinegar
- 2 tablespoons light brown sugar
- 1 tablespoon unsalted butter
- 1 1-inch piece peeled fresh ginger, cut into coins
- 1 teaspoon Madras curry powder
- 1 cinnamon stick
- Kosher salt
- 1 pinch crushed red pepper
- 2 – 3 pears, peeled, cored, and cut in large dice
- 2 tablespoons dried cranberries
- 2 tablespoons chopped fresh cilantro
- In a medium sauce pan on medium heat, stir together shallot, vinegar, brown sugar, butter, ginger, curry powder, cinnamon stick, ¼ teaspoon salt, and red pepper. Stir continuously for 1 minute.
- Add pears and simmer gently for 15 minutes. Add cranberries and simmer 5 minutes longer.
- Remove from heat and add the cilantro.
Tips
- If serving with pork chops, you can remove the pork chops from the pan and add the chutney. Scrape up any brown bits from the bottom using a wooden spoon and simmer until slightly thickened.
