Mississippi Mud Cake

This is the family recipe that Logan’s mother would use to make his favorite birthday cake.
Family Vegetarian
Cake
- 1 cup butter
- 2 cups sugar
- 4 eggs
- 1 teaspoon vanilla
- 1½ cups flour
- 2 tablespoons cocoa
- 1½ cups pecans
- (optional) ⅓ cup coconut
- 1 ⨯ 7-ounce jar marshmallow cream
- Preheat oven to 350°F.
- Cream together butter and sugar. Blend in eggs and vanilla. Gradually add flour and cocoa. Blend in nuts and coconut.
- Bake for 40 minutes.
- While still hot, spread marshmallow cream on top.
Tips
- Cocoa may be increased or decreased according to desired color of the cake batter.
- If it is difficult to spread the marshmallow cream evenly, place the cake back in the oven so the marshmallow cream has a change to melt slightly.
Icing
- 16 ounces box powdered sugar
- ½ cup butter
- ½ cup evaporated milk
- 1 teaspoon vanilla
- ½ cup cocoa
- Mix all ingredients together and spread on cake.
