Mississippi Mud Cake

This is the family recipe that Logan’s mother would use to make his favorite birthday cake.

 Family Vegetarian

Cake

• 1 cup butter
• 2 cups sugar
• 4 eggs
• 1 teaspoon vanilla
• 1½ cups flour
• 2 tablespoons cocoa
• 1½ cups pecans
• (optional) ⅓ cup coconut
• 1 ⨯ 7-ounce jar marshmallow cream

1. Preheat oven to 350°F.
2. Cream together butter and sugar. Blend in eggs and vanilla. Gradually add flour and cocoa. Blend in nuts and coconut.
3. Bake for 40 minutes.
4. While still hot, spread marshmallow cream on top.

Tips

• Cocoa may be increased or decreased according to desired color of the cake batter.
• If it is difficult to spread the marshmallow cream evenly, place the cake back in the oven so the marshmallow cream has a change to melt slightly.

Icing

• 16 ounces box powdered sugar
• ½ cup butter
• ½ cup evaporated milk
• 1 teaspoon vanilla
• ½ cup cocoa

1. Mix all ingredients together and spread on cake.
