Italian Egg Pie

- 1 teaspoon oil
- 1 green pepper, cut in rings
- ½ cup chopped onion
- 6 large eggs
- 6 ounces Mozzarella cheese
- ¼ cup fresh parsley
- 16 ounces whole tomatoes, drained and chopped
- 1 teaspoon oregano
- 1 ounce thinly sliced pepperoni
- Sauté onion and pepper in oil.
- In large bowl, beat eggs until frothy. Add everything but pepperoni.
- Pour into greased 10-inch pie plate. Arrange pepperoni on top.
- Bake at 350°F for 30 to 40 minutes, until mixture is no longer liquid in center.
