Harvard Beets

Family Vegetarian
- 2 cups diced, cooked beets
- ½ cup sugar
- 2 tablespoons flour
- ¼ cup vinegar
- 2 tablespoons butter
- ½ cup water
- ½ teaspoon salt
- Mix sugar and flour.
- Add vinegar and water.
- Cook over low heat in heavy saucepan until thick.
- Add salt and butter, then diced beets.
- Reheat and serve.
