Guacamole

- ½ small onion, finely chopped
- 4 tomatoes, peeled, seeded and finely chopped
- 1 green chili, seeded and finely chopped
- ½ small green bell pepper, seeded and finely chopped
- 1 tablespoon chopped cilantro
- 2 large ripe avocados
- salt and black pepper
- tortilla chips or raw vegetables to serve
- In a bowl, mix onion, tomatoes, chili, bell pepper and cilantro. Cut avocados in half lengthwise, remove seed and scoop out flesh.
- Mash roughly with tomato mixture. Season with salt and black pepper. Stir in lemon juice. Transfer to a servicing bowl. Serve immediately with tortilla chips or vegetables.
