Fennel-Pear Mostarda

- 3½ cups Bartlett pears, peeled, cored, and cut into ½-inch pieces
- 2 medium fennel bulbs, chopped
- 1 tablespoon fennel fronds chopped
- 1 teaspoon orange zest
- ½ cup fresh orange juice
- ⅓ cup golden raisins
- 2 tablespoons honey
- 2 tablespoons mustard seed
- 2 tablespoons prepared Dijon-style mustard
- 1½ tablespoons apple cider vinegar
- 1½ teaspoons kosher salt
- ½ teaspoon black peppercorns
- Combine orange juice, honey and apple cider vinegar in a small saucepan and bring to a boil.
- Add remaining ingredients and return to boil.
- Reduce to a low heat and slowly simmer until fennel and pears soften (approximately 30-40 minutes).

- Serve as a topping for pork.
