Dried Bread Crumbs

  1. Preheat the oven to 325°F. We use European-style white bread to make our bread crumbs. We do not remove the crusts, since we sieve the crumbs if we need them to be fine. Slice the bread to ½-inch-thick slices. Place them in a single layer on an ungreased baking sheet. Put the baking sheet in the oven and bake until the bread feels dried out in the center, about 40 minutes. Turn the bread over from time to time so it dries evenly. Remove the bread from the oven and allow to cool. Tear the bread into pieces and place in a food processor.
  2. To make coarse bread crumbs, pulse until the bread is in coarse crumbs.
  3. To make fine bread crumbs, continue pulsing until the crumbs are very fine. Then sieve the crumbs to remove any large pieces.
