Dijon Salad Dressing

- 3 tablespoons Dijon mustard
- 3 tablespoons champagne vinegar
- ½ teaspoon kosher salt
- pepper, to taste
- ½ cup extra-virgin olive oil
- Whisk together Dijon mustard, vinegar, salt and pepper.
- Gradually whisk in olive oil.
