Chicken Souvlaki Salad

Salad
- 1 teaspoon extra-virgin olive oil
- 2 teaspoons minced garlic
- 1 pound boneless, skinless chicken breast, cut in bite-size pieces
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 cucumber, partially peeled and cubed
- 1 large red onion, coarsely diced
- ½ cup crumbled feta cheese
- 2 tablespoons kalamata olives, chopped pitted
- 1 – 2 ripe tomatoes, cored and cut into ½-inch cubes
- (optional) ½ head romaine lettuce, chopped
- Heat olive oil in a pan. Sauté garlic and add chicken. Add lemon juice, oregano, salt and pepper. Cook until chicken is done and lightly browned.
- In a large bowl, combine chicken with remaining ingredients.
- Optionally, serve on a bed of romaine lettuce and top with the yogurt sauce below.
Yogurt Sauce
- ½ cup plain fat-free yogurt
- ¼ cup cucumber, peeled and grated
- 1 teaspoon white wine vinegar
- ½ teaspoon garlic powder
- ½ teaspoon dried dill
- ½ teaspoon dried mint
- ¼ teaspoon ground red pepper
- Salt, to taste
- Mix the ingredients and chill.
