Caramelized Apples

- ¾ cups apple cider
- ¼ teaspoon cinnamon
- ¼ teaspoon ground ginger
- ⅛ teaspoon nutmeg
- ⅛ teaspoon allspice
- ⅛ teaspoon cloves
- ⅛ teaspoon cardamom
- ¼ cup dried tart cherries, golden raisins or dried cranberries
- 2 apples (Fuji works well), unpeeled, chopped into ½” to ¾” size chunks
- Brown sugar, to taste
- Pour apple cider into a small saucepan.
- Add spices, dried fruit and apples.
- Place on medium-high heat and bring to boil. Reduce to medium for steady boil. Stir occasionally.
- Let liquid reduce to a syrup. Don’t let it burn to the pan.
- Serve on pancakes or waffles, mix in oatmeal, serve with pork, etc.
Tips
- Apple cider can be substitued with apple juice, cherry juice or even orange juice.
- Apple cider can also be replaced with half fruit liqueur (Calvados, Heering cherry, Luxardo, etc.) and half water.
- Increase the recipe and refrigerate for multiple uses.
