Bratwurst Stewed with Sauerkraut
The extra spice adds an elevated twist to a classic Sauerkraut dish.

- 2 tablespoons oil
- 4 – 6 fresh bratwurst links
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 – 3 cups chicken stock
- 1 tablespoon paprika
- 1 tablespoon caraway seed
- 3 – 4 cups sauerkraut, drained
- 2 tablespoons fresh dill, chopped
- 1 baguette
- In a large pan, heat oil over high heat. Brown bratwurst in oil.
- Reduce the heat to medium, add onions and garlic, and cook until lightly caramelized.
- Add stock, paprika, caraway seeds, and sauerkraut and simmer for 45 minutes.
- Remove from heat and stir in fresh dill. Serve on baguette.
Tips
- One evening, I discovered that I had run out of caraway seed. As an alternative, I substituted fennel seed and ground cloves. This flavor profile worked great.
