Bistro Bacon Salad Dressing

• 2 tablespoons red wine vinegar
• 2 teaspoons Dijon mustard
• ½ teaspoon kosher salt
• pepper, to taste
• ⅓ – ½ cup extra-virgin olive oil
• 3 slices bacon, cooked and crumbled
• ⅓ cup blue cheese
• 2 tablespoons chives, chopped

1. Whisk together red wine vinegar, Dijon mustard, salt and pepper.
2. Gradually whisk in olive oil.
3. Added crumbled bacon, blue cheese and chives.
