Apple Chicken Salad

When I was single, this was a simple salad I could quickly make for an easy dinner.

- 2 chicken breasts
- 1 granny smith apple, diced
- 1 cup walnuts, chopped and lightly toasted
- 2 – 3 green onions, chopped
- 2 tablespoons Caesar salad dressing
- (optional) 4 ounces feta, crumbled
- Salt and freshly ground pepper, to taste
- Preheat oven to 375°F.
- Grease a glass baking dish. Season chicken with salt and pepper, and bake 20-25 minutes.
- Meanwhile, combine apple, walnuts and green onions in a bowl.
- When the chicken is fully cooked, let rest and cool for at least 10 minutes. Chop and add to the bowl.
- Coat with Caesar salad dressing and toss with feta.
- Season to taste.
